At The Italian Cellar, we are delighted to introduce Capriata Merlot, a refined expression of the Merlot grape, skillfully cultivated in the fertile soils of Sicily. This wine exemplifies the elegance and depth of Sicilian winemaking.
Tasting Notes
Capriata Merlot presents a deep and bright ruby red color, captivating the eye with its vibrant hue. The aroma is intense and enveloping, offering delightful notes of small ripe red fruits. On the palate, the wine is rich, warm, and velvety, with clear sensations of black cherry and particularly elegant tannins. It is well-structured, harmonious, and dry, with a remarkable aromatic persistence that lingers pleasantly.
Winemaking Process
The meticulous winemaking process of Capriata Merlot ensures its exceptional quality. Hand-harvested in mid-August, the grapes undergo a soft pressing followed by alcoholic fermentation with maceration on the skins at a controlled temperature of 82°F for 12 days. After malolactic fermentation, the wine matures first in large oak barrels for 6 months, then in vitrified cement tanks. Post-bottling, it ages for an additional 6-8 months to fully develop its bouquet.

Big things often stem from simple ideas, and our story is no exception. The ancient winery was established in 1864 by Andrea Savalla and later continued by his son Antonino, an expert in agriculture. Despite the devastation of phylloxera, the use of noble vines like Grillo, Perricone, and Inzolia allowed the winery to flourish. In 1974, Antonino's heirs founded Enopolio Savalla, which operated until 2010.
Family histories are often intertwined with success stories, particularly in the wine industry. The cultivation and transmission of passion and expertise across generations are integral to producing excellent wines. Inspired by this legacy, brothers Fabio and Piero Scavone established Scavone Cantine in 2011. Guided by their experienced father Nicolò, they renovated and transformed one of the oldest cellars in the area into a modern, efficient winery.
