Gazzarella Grillo: An Elegant Sicilian White

At The Italian Cellar, we are thrilled to introduce Gazzarella Grillo, a distinguished wine that exemplifies the richness of Sicilian viticulture. This wine is crafted from the Grillo grape variety, known for producing full-bodied and aromatic wines that capture the essence of Sicily’s unique terroir.

Tasting Notes

Gazzarella Grillo presents a beautiful yellow color with greenish reflections, indicating its freshness and vibrancy. The bouquet is intense, pleasant, and balanced, featuring a highly fragrant blend of white peach and grapefruit, complemented by subtle undertones of aromatic herbs. On the palate, it boasts a robust and mineral-rich flavor profile, delivering a full-bodied and satisfying taste experience.

Winemaking Process

The meticulous care taken in the winemaking process of Gazzarella Grillo is evident in every bottle. Hand-harvested at the beginning of September, the grapes undergo a soft pressing, followed by alcoholic fermentation with maceration on the skins at 80°F for about 11 days. This is followed by malolactic fermentation, after which the wine matures for at least 24 months in French oak barrels. It then refines for 12 months in the bottle, completing its evolutionary state and enriching its aromas.

In the fertile lands of Western Sicily, wine and nature form a perfect union. This region is historically celebrated for its rich wine production, featuring great grape varieties that thrive in its unique conditions. Our vineyards are a living testament to this legacy, offering an unparalleled experience of taste and tradition.

A stroll through our vineyards is more than just a walk; it is an immersion in breathtaking scenery that evokes powerful emotions. Here, you can unwind and savor our exceptional wines in the warm glow of the setting sun, creating memories that linger long after the last sip. Our food and wine tastings are designed for both enthusiasts and newcomers who wish to discover the most representative wines of our cellar. Big things often stem from simple ideas, and our story is no exception. The ancient winery was established in 1864 by Andrea Savalla and later continued by his son Antonino, an expert in agriculture. Despite the devastation of phylloxera, the use of noble vines like Grillo, Perricone, and Inzolia allowed the winery to flourish. In 1974, Antonino's heirs founded Enopolio Savalla, which operated until 2010.

Family histories are often intertwined with success stories, particularly in the wine industry. The cultivation and transmission of passion and expertise across generations are integral to producing excellent wines. Inspired by this legacy, brothers Fabio and Piero Scavone established Scavone Cantine in 2011. Guided by their experienced father Nicolò, they renovated and transformed one of the oldest cellars in the area into a modern, efficient winery.

Each bottle from our winery is more than just wine; it is an invitation to delve into the rich history of our family. It embodies our passion for the land, the vineyards, the scent of the must, and the vibrant atmosphere of the cellar during the September harvest. It is a testament to the love and care that goes into every bottle, offering you a chance to experience a piece of our heritage with every sip.
